These black bean & quinoa burgers are tasty and vegan!

Ingredients

For the burger patties

  • 240g black beans, drained weight
  • 80g quinoa, cooked
  • 50g breadcrumbs
  • 4 tbsp tomato paste
  • 1 tbsp tamari
  • 1/2 an onion, grated
  • 1.5 tsp smoked paprika
  • 1.5 tsp garlic powder
  • 1 tbsp dried oregano
  • 4 tbsp fresh parsley, chopped
  • Salt and pepper, to taste

To serve

  • 4 burger buns
  • 4 tbsp vegan mayonnaise
  • 1 head lettuce
  • 1 large beef tomato

For the burger patties

Step 1

In a large bowl, crush the black beans with a potato masher.

Step 2

Add the remaining ingredients for the burger patties and mix well until you have a moldable consistency.

Step 3

Taste the mix and adjust the seasoning as required.

To serve

Step 1

Spread the mayonnaise across the four buns.

Step 2

Place a few lettuce leaves onto the bottom half of the bun followed by a slice of tomato.
