banana and dark chocolate baked oats with manuka honey
These baked oats will become a staple in your winter cooking repertoire. Warm and comforting and full of flavour, they are sure to get you out of bed in the morning!

Ingredients

  • 200g gluten free oats
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 100g dark chocolate, roughly chopped
  • 50g Egmont Manuka Honey 
  • 3 eggs
  • 1 tsp vanilla extract
  •  475g banana (5 small or 3 large)
  • 250ml milk
  •  250ml water
  • 120g almonds, roughly chopped
  • 1 tbsp butter
  •  1 tbsp Egmont Manuka Honey (for topping)

Method

Step 1

Preheat the oven to 180 degrees and grease an oven-proof dish generously with butter.

Step 2

Put the oats, cinnamon, baking powder, and chocolate into a bowl and mix well.

Step 3

In a separate bowl whisk together the honey, eggs, and vanilla. Add in the banana (we reserved one small banana to put on top of the baked oats but this is optional) and mash before adding in the milk and water, and mixing well.

Step 4

Add the wet ingredients to the dry, mix well to combine, and pour into the baking dish.

Step 5

In a small saucepan melt the honey and butter. Add in the almonds, stirring to coat them in the mixture. Scatter these over the oats, add the banana on top (if you decided to do this), then bake for 35-40 minutes or until golden brown and set.

Step 6

Serve with yogurt and a drizzle of manuka honey.
